Quinoa Fried Rice Ingredients: 1 C quinoa 2 C water 2 TBSP coconut or vegetable oil 4 medium carrots, diced 2 medium shallots, thinly sliced 4 scallions, white and green parts separated, thinly sliced Sea salt 4 garlic cloves, minced 1 TBSP minced fresh ginger 2 TBSP low sodium soy sauce 2 tsp toasted sesame oil 1/2 tsp sriracha 2 eggs, beaten Directions: In a medium saucepan, boil water and cook quinoa according to the package directions. In a large skillet, heat oil over high heat and begin to sauté the veggies: carrots, shallots and scallions. Cook for about 5-6 minutes or until vegetables begin to brown. Add in salt, garlic and ginger and sauté for an additional 2 minutes. Begin to fold in the quinoa making sure to incorporate all of the veggies. Gently stir in soy sauce, sesame oil and sriracha. Create a well within the quinoa mixture by pushing it all to the edges of the skillet. Begin stirring the eggs into the center of this well. Gently combine all of the ingredients in the skillet.
