Colleen Fitzgerald's Potato Latkes 2 eggs 3 c. grated Idaho potatoes, unpeeled 1/3 c. grated onion 3 T. flour 1 1/2 t. salt parsley flakes 1/2 t. rosemary leaves 1/4 t. ground sage 1/4 t. pepper Beat the eggs until foamy. Grate the potatoes and onions in the food processor. Combine all ingredients, adding more flour if needed. Form into patties and fry in peanut or canola oil. Drain and serve with sour cream and applesauce. makes 16 latkes
