Chocolate pudding


¼ cup cornstarch

3/16 cup sugar 

3 cups whole milk

1 cup (7 oz.) bittersweet chocolate (eg. Callebaut L-60-40NV Thick Bittersweet cooking/baking chocolate bits, 60% cocoa)

1 tsp. vanilla (or Kahlua)


Combined cornstarch and sugar in heavy-bottomed saucepan.  Stir in milk and chocolate.  Heat, whisking constantly until mixture thickens.  Stir in vanilla.
